Chambers Fine Coffee is a specialty coffee roaster and café group born and based in Sydney, Australia. We roast and pack our beans in Sydney, serve them across our café network, and ship them Australia-wide so you can brew the same coffee at home. Who is Chambers Coffee?

Chambers is a Sydney coffee roastery and café chain. We are passionate about making genuinely good coffee accessible to everyone — whether you are a home brewer dialling in an espresso machine or a mid-morning bruncher in one of our cafés. Our beans are Australian made (roasted and packed in Sydney), barista approved (we use the exact same beans in our cafés that we sell online), and sourced ethically and sustainably.

Almond Blossom — our house espresso blend

Almond Blossom is the heart of Chambers and our signature house espresso blend. It is a medium roast built to be smooth, sweet and never bitter, with notes of almond, milk chocolate and stone fruit. It pulls beautifully as a flat white, latte or cappuccino, and is the easiest place to start if you are new to the range. Available in whole bean or ground for espresso, French press, V60 and filter.

Starry Night — our strong, dark blend

Starry Night is our strong espresso blend for those who want more — a darker, richer, more syrupy cup with bold dark-chocolate intensity. Choose Starry Night if you like a powerful long black or a milk coffee that cuts through.

Single O Decaf — 100% chemical-free

Great decaf should not taste like an apology. Chambers Decaf is decaffeinated using the Swiss Water Process, a 100% chemical-free method that strips the caffeine while keeping the flavour. It is a clean, sweet, medium-roast cup that is also a popular choice during pregnancy.

How to brew Chambers coffee at home

The best brew method is the one that suits your routine. Here is a simple starting point for each, using the gear we stock.

Espresso machine

Use a fine grind, aim for roughly an 18g dose pulling about 36g of espresso in 25–30 seconds, and keep your machine clean — coffee oils and limescale are the enemies of good espresso. Our cleaning range includes machine cleaner, descaler and a group-head brush.

Pour-over (Hario V60)

Pour-over makes a clean, bright, aromatic cup. Use a medium-fine grind, a 1:16 coffee-to-water ratio (for example 20g coffee to 320g water), bloom for 30 seconds, then pour in slow steady stages. Pair it with our Hario V60 paper filters.

AeroPress

The AeroPress is forgiving, fast and ideal for travel. The AeroPress Go brews the same smooth, rich coffee you would expect from your kitchen, anywhere. Use a medium-fine grind and a short 1–2 minute brew.

French press (plunger)

For a full-bodied cup, use a coarse grind, a 1:15 ratio, steep for four minutes, then press slowly. Almond Blossom in French press grind is a great everyday choice.

What makes specialty coffee different?

Specialty coffee is graded for quality and traceability, roasted in smaller batches, and roasted close to when you drink it. Freshness matters: coffee is best in the weeks after roasting, which is why we roast to order rather than warehousing stock. Buying from a roaster like Chambers means the beans in your cup were roasted in Sydney, not sitting on a shelf for months.
